Now, this list may be intimidating, but if you start to eliminate one by one very slowly over time, you will be easing yourself into a healthier diet without even realizing it. I still eat very few of these foods once in a while, and have noticed that I don’t crave any of them anymore. The longer you go without eating them, the less you will crave them.  The times I may eat any of these is when I am out and unable to eat anything healthy or at someone else’s that doesn’t eat like me.

I never craved sweets, my favorite was always potato chips.  I use to crave them, but not anymore.  Once in a while I do feel like eating either potato chips, organic corn chips with salsa, Skinny Pop Popcorn or Utz Special Extra Dark Pretzels, but I don’t go crazy and buy all three at once.  One at a time and not often. I’m very specific about my cheat treats.

I truly believe that if you eat healthy and do the right thing for your body, once in a while you can treat yourself with something bad if you feel the need to. But you do have to eat healthy almost all of the time in order to do that. The only thing that I definitely stand by is that I only eat organic produce and grains.

Vitamins and Supplements

Supplements are a way of adding to your nutrition intake or to provide what is missing from your diet. I have learned that supplements can be very important for overall health. Ever since I started (actually about 6 to 8 weeks later) B-complex and Evening Primrose, my “chemo brain” is gone. Remember that when starting any supplement it takes about 6 to 8 weeks for your body to actually feel the effects. So don’t get discouraged if you start something and it does not work right away.

The body needs a wide variety of vitamins and minerals consistently for optimal health. Meaning the body needs the same amount daily and this cannot easily be provided by diet alone.

Besides my supplements, I drink lemon water everyday, and I try to drink barley grass juice everyday (I mix it with about 4 oz. of organic tomato juice).

Most of my vitamins and supplements are from Puritan’s Pride. I find the quality to be good, and they’re inexpensive.


Healing After Chemotherapy

 Healing after chemotherapy takes some time.  Two years later and I was still getting over the side effects.  About one month after chemo ended, I started getting sick all the time because of my compromised immune system. Every month was a new sickness or a relapse for about a year. At that time I did think of going back on the macro diet, but instead started looking into the effects of different foods, good and bad, on the body. I also began to look into supplements and increased my vitamin C and D intake along with other supplements to improve my immunity.


Besides chemo, Tamoxifen also messes with the body.  It depletes estrogen and causes menopause when that shouldn’t be happening for years. Between the hot flashes, insomnia, short term memory loss and brain fog, I felt hopeless and depressed. After months and months and more months of complaining to my oncologist, she finally tells me I could take Evening Primrose for the hot flashes. As for the memory loss and brain fog (both are considered chemo brain as I was told by my oncologist) there was nothing I could do, so she said anyway. But that was not true.

Being in menopause sooner than you’re suppose to be only ages you sooner.  This is caused by hormone depletion.  Hormones usually start depletiing in our thirties, causing the body to be imbalanced, which then throws off our overall function.  Senility, Alzheimers, dementia, or whatever it’s called these days doesn’t hit us when we are thirty.  Also, as we age, our bodies don’t absorb nutrition like it used to, which means that we have to increase with supplements because diet alone will not help.  Believe me, I’ve tried.

As I started increasing my supplements, I started to increase my fruit intake.  At first it was an apple a day then a bowl of antioxidants everyday, including strawberries, raspberries, blueberries, and more recently, blackberries.  My fruit is always organic. Years ago when I would eat any fruit, I would get sort of an allergic reaction, which would be crazy itching from my lips into my mouth and down my throat. It drove me insane so I stopped eating fruit.

Become Health Conscious

To become health conscious, I recommend starting out slowly if you do not eat anything healthy because it will be a smoother transition. Health conscious foods are whole foods that are grown from the earth and eaten unprocessed.

Years before I did anything healthy, the only vegetables I ate were corn, peas, and overcooked spinach and broccoli. I did enjoy salad with iceberg lettuce (no nutritional value), red onions, cucumbers and black olives. The I switched to romaine lettuce and added shredded carrots to my salad, and added overcooked cauliflower to my short vegetable list. It was only eight years ago that I started eating raw broccoli and cauliflower dipped in ranch dressing (until I realized how back that dressing was for me.) Understand that if your food doesn't come from the earth, chances are it's not good for you.

An important thing I learned while trying new food was if I didn't like the first time, I tried it again, and maybe again. Nine out of ten times I ended up loving that food.

Try to buy organic. I know organic costs a little more, but (I heard that) the reason organic costs more is to make up for the loss of produce from the insects due to no chemicals. I read that the chemicals sprayed on the produce may kill most of the nutritional value. The chemicals are man-made, and because of that, the body cannot process and eliminate it. That is why it is believed that these chemicals can cause cancer.

Look into supplements. I take a few every day, and used to take more before I found my current supplement supplier. During and after chemotherapy I had massive brain fog. Couldn't think straight or remember anything. I started researching supplements for my symptoms, and it lead me to where I am today. No more brain fog or forgetfulness. I feel even batter today than I did before the cancer.

Hydrate yourself. On of the benefits of water is that it rinses the toxins from the body. If your lips and/or skin feel dry, you're dehydrated. Drinking water first thing in the morning wakes up the body. Lemon water every day is also a good idea. Besides detoxifying the body, lemon water raises the body's pH level and is high in vitamin C. And that's just a glass of water with squeezed lemon. NO SUGAR!

Start an exercise regimen. We can eat as healthy as we want, but if the stress level is out of control and we're not exercising, we are at some risk of sickness and disease. I do know anytime I feel stressed, I workout for 25 to 45 minutes (depending on how much time I have) and my stress melts away. It amazes me. Exercise lowers insulin levels to create a low sugar environment. So find an exercise that works for you, whether it's walking every day, Yoga, Pilates, or whatever interests you and gets your heart rate up. You won't know until you try. The benefits of sweating out toxins, raising the heart rate along with the post-workout high are amazing.

Improve your diet

There are many ways to improve your diet. Every person beginning a healthy journey has to find the right fit for them - the right diet for their body. Not all diets are the same for everyone.

It's a lifestyle, not a diet

Diet doesn't necessarily mean to lose weight, but to just watch what you eat, or is a certain way of eating. I believe the best diet includes more fruit and vegetables than meat. Animal meat is high in fat and cholesterol, and we all know that's not good for us. The ratio of meat to vegetables and fruit depends on where you live - colder climates require that you eat a lot of animal meat to survive the cold, but warmer climates require more fruit and salads because they cool the body.

Eating in moderation goes for good and bad foods

Too much of anything is no good for anyone's body. That's where the old saying "Everything in moderation" comes from. A good start is to figure out what you eat too much of and then cut back on it little by little. Then you can focus on what you're eating and start cutting back on the bad foods. I understand that this sounds easy and that it's not. I still struggle with some meal choices for convenience but I do take fruit and veggie snacks and nuts on the go.
